Baked aubergines with tomato sauce

Ingredients:
  • 1 kg aubergines
  • Olive oil for frying
  • For the sauce
  • 3 tablespoons of olive oil
  • 3 thickly chopped onions
  • 2 finely chopped garlic cloves
  • ½ kg chopped tomatoes
  • Salt, pepper, cumin, oregano
  • 150 gr. Feta cheese

Preparation:

Cut the aubergines down the middle or chop them, salt them and let them rest.Make the sauce by adding the onion with a little water in a pot and letting it cook a little. Once the water has evaporated, add the olive oil, the garlic and then the tomatoes, salt, pepper, cumin and oregano and cook for 10 minutes. Turn off the heat and stir in the feta cheese. Wash, dry and lightly fry the aubergines. Place them in a baking tray, cover with the sauce and cook in a medium heated oven for approximately half an hour.

You can cook potatoes or potatoes and aubergines together in exactly the same way
