Horse beans

Ingredients:
  • ½ kg horse beans
  • 2 grated onions
  • Salt, pepper
  • 5 table spoons olive oil
  • For serving
  • ½ cup olive oil
  • 2 sliced lemons
  • Finely chopped onion
  • Olives (optional)

Preparation:

Brown the onions in the 5 tablespoons of olive oil. Add 5 cups of water, salt and the horse beans (washed and drained). Cook on low heat until the beans turn into a pulp and most of the water has evaporated. Do not cover the pot as the beans swell and spill. Towards the end keep stirring constantly to prevent sticking and to help mash. When the mixture cools it becomes thicker. Add some pepper, and when serving pour some olive oil, chopped onions, lemon slices, olives or capers, depending on your preference.
