Olive oil biscuits

Ingredients:

  • 3 cups of olive oil
  • 2 cups of sugar
  • ½ cup lemon and orange juice
  • 1 tablespoon cinnamon and cloves
  • ½ cup raki (alternatively, if not available, use any spirit)
  • 1 tablespoon baking soda
  • 1 cup roasted sesame
  • Approx 1.5 kg. flour

Preparation:

Mix the olive oil with the sugar, add the baking soda dissolved in the juice, the cinnamon and cloves, the raki, the sesame and, at the end, the flour mixed with the baking powder. Knead into soft dough and form the biscuits. There is no need to add extra sesame on top. Bake in a medium heated oven until golden.
